Homemade tahini hummus
Homemade tahini hummus is one of the most Israeli dishes: tasty, healthy, and nutritious.
You can buy ready-made hummus, but nothing beats the dedicated, homemade version!
Here's the recipe for perfect homemade hummus!
Ingredients for 4-6 servings
- 2 cups chickpeas
- ½ tsp baking soda
- ¾ cup Al Arz tahini
- ½ cup lemon juice
- 1 teaspoon of salt.
For tahini (to serve):
- 1 cup Al Arz tahini
- Juice from ½ lemon or more to taste
- ¾ cup cold water
- 1-2 crushed garlic cloves (optional)
- Salt to taste
Additional ingredients for serving:
- Cooked chickpeas
- Olive oil
- Chopped parsley
- Sweet paprika
- Fresh pita bread
Homemade hummus with tahini
Hummus preparation
The day before, soak the chickpeas in plenty of water overnight (they can be refrigerated). Drain, transfer to a pot, cover with plenty of water, add baking soda, and cook for about two hours until soft. Drain and set aside a handful of chickpeas for serving.
In a bowl, mix the ingredients: tahini, lemon juice, and salt until you get a consistent and thick mixture.
Grind the cooked chickpeas and the prepared tahini paste in a food processor into a smooth, creamy mixture. If necessary, add a bit of cold water. Taste and season as needed.
Tahini preparation for serving:
In a bowl, mix tahini paste, lemon juice, water, garlic (optional), and salt into a smooth mixture with the desired consistency (add more water if necessary). Taste and season to your liking.
Spread the hummus on plates, generously drizzle with tahini, sprinkle with chickpeas, drizzle with olive oil, sprinkle with parsley and paprika, and serve with pita on the side.
You can also sprinkle cumin on top.
