Spinach Salad with Tahini Dressing.

Ingredients:

– 1 package of fresh spinach leaves.
– 2 sweet potatoes, peeled and cut into 1 cm cubes.
– 1 thinly sliced purple onion

Ingredients for Tahini Sauce:

  • 3 tablespoons of raw tahini
  • 1 cup of cold water
  • Juice of half a lemon
  • Salt and pepper to taste.

Preparation:

Preheat the oven to 220 degrees Celsius. Place the sweet potato cubes on a baking sheet lined with parchment paper. Coat with olive oil, salt, and pepper, and place in the oven for 20 minutes or until the sweet potato cubes are soft. Remove from the oven and let the sweet potatoes cool. Place the spinach, onion, and sweet potato leaves in a bowl. Pour the tahini sauce over and mix well. Arrange on a large serving plate and serve.
